Lunchtime
I love my lunchtime routine. At the beginning of the week, I head to Trader Joe's just a block from my office, and buy a bag of arugula, and some salad fixin's. I cringe at how over-packaged things at TJs are....and yet....the convenience factor plays a major part in my corroboration in this case. One package of pre-cooked lentils, one package mini mozarella balls, one package cherry heirloom tomatoes and a bag of arugula last exactly a week. I can put them in the fridge at work, and don't need to worry about packing a lunch each day. When the fridge is emptied at the end of the week, the food's gone anyway. It's delicious, colorful, nutritious...and a delight to eat outside on the back porch, even in the heat.
